Candied Mint Leaves

<p>These mint leaves &#8211; sugared, crystallized, candied, or however you describe them &#8211; are super simple and a lovely way to top off a scoop of ice cream and a variety of other delights!</p> <p>Always rinse and dry herbs before use to avoid consuming incidental contaminants.</p> <p>As a Vegan alternative you can use ground flax seeds and water (flax eggs) instead of egg white. You can also substitute your favorite sweetener, fine sugar, fructose, or granulated Stevia instead of sugar.</p> <ul> <li>As with any usage of raw egg, take appropriate precautions in handling properly and obtain eggs from a reputable source.</li> </ul>

Candy Roaster Pie

<p>Ingredients:<br /> 1-1/2 cups of heavy cream <br /> 2 cups of Candy Roaster Squash puree, see instructions<br /> 4 large eggs, beaten<br /> 1/2 cup white sugar <br /> 1/4 cup brown sugar <br /> 1 tsp. ground cinnamon<br /> 1/8 tsp. ground cloves<br /> 1/8 tsp. ground allspice<br /> 1 prepared raw pie crust</p> <p>Instructions:<br /> Add everything together and mix well. Pour into a prepared raw pie crust<br /> and put into a preheated 450F degree oven and set a timer for 15 minutes.<br /> When the timer goes off set the oven temperature to 350F degrees and bake<br /> for another 45 minutes or so until the edges of the pie are browning and<br /> the center is solid. Remove the pie from oven and cool for about 30 to 45<br /> minutes.</p> <p>For the Candy Roaster Squash Puree: Use a medium sized Candy Roaster<br /> squash , about 3 pounds. Cut open, take out the seeds and place the squash<br /> cut side down on a cookie sheet and into a 350F degree oven for about 45<br /> minutes; cook until it is softy and there is liquid on the bottom of the<br /> pan. When the squash is cooked take out of the oven, flip them over so the<br /> flesh side is facing towards the ceiling so it will cool faster.</p> <p>Take the cooked squash, remove the flesh and mashed it into a puree using<br /> a fork, a potato masher or a food processor to get the flesh smooth. If<br /> the squash seems watery put the puree into a strainer and let the water<br /> drip out for a couple of minutes, you can quicken this by gently pushing<br /> on the pulp in the strainer.</p>

<p>I made this using ingredients from the <span class="caps">JBO</span> Market, with the exception of the olive oil. It can be made vegan by leaving out the cheese, and gluten free by leaving off the breadcrumbs. Eggplant can also be used in place of, or in addition to, the other sliced veggies. Just slice thin and salt for a while to let it sweat, and rinse off.</p> Vegetarian!

Carrot Top Soup Recipe

<p>Carrot Top Soup Recipe</p> <p>4 lbs of small to medium carrots with tops and roots <br /> 2 tablespoons butter <br /> 3 tablespoons white rice <br /> 2 large leeks, white parts only <br /> 2 thyme or lemon thyme sprigs <br /> 2 tablespoons chopped dill, parsley, or celery leaves <br /> salt and freshly ground pepper <br /> 6 cups vegetable stock, chicken stock, or water <br /> Pull or pluck the lacy leaves of the carrot greens off their stems. You should have between 2-3 cups, loosely packed. Wash, then chop finely. Grate the carrots or, if you want a more refined-looking soup, finely chop them. Melt the butter in a soup pot. Add the carrot tops and carrots, rice, leeks, thyme, and dill. Cook for several minutes, turning everything a few times, then season with 1 1/2 teaspoons slat and add the stock. Bring to the boil and simmer until the rice is cooked, 16-18 minutes. Taste for salt, season with pepper, and serve.</p> Vegetarian!
