Chevon Shepherds Pie

Serves: 6 to 8 servings


Ingredients
1 & 1/2 pounds Ground Goat
1/2 cup chopped fresh dill
4 pounds potatoes
1 large onion
4 Tbl. olive oil
1/2 cup chopped parsley
1 tsp. salt
1/4 tsp pepper
2 diced fresh tomatoes
1 cup parmesan cheese
1 cup chopped carrots
1 cup petite peas
1/2 cup melted butter

Step by Step Instructions
  1. Preheat oven to 350 F
  2. Boil potatoes in salted water until tender. Drain, mash thoroughly, then set aside. Once the potatoes have cooled, mix in 3 eggs, Dill, and 1/2 the Parmesan Cheese.
  3. In a large skillet, brown Ground Goat and Onions. Stir in Tomatoes, carrots, peas, Parsley, Salt & Pepper and cook for 10 minutes. Once the mixture has cooled, add the remaining egg.
  4. Butter a large baking dish. Spread 1/2 of the potatoe mixture over the bottom, top with the meat mixutre and top it with the remaining potatoe mixture.
  5. Pour the melted butter over the top and sprikle the remaining parmesan cheese.
  6. Bake for 40 minutes.
