<p>This is easy and quick. Perfect for a summer meal. I usually add other vegetables depending on what’s on hand. At one time or another I’ve added onion, black olives, zucchini (sliced like ribbons) Pickled pepper rings. Also, I have split the pitas in half. Serves: 4 but easily adjusts for more or less.
Step by Step Instructions
- Place pitas on baking sheet. Combine the ricotta and garlic powder and spread on pitas. Top with spinach, tomatoes, feta and basil.
- Bake at 400 degrees. for 12-15 minutes or until pita is lightly browned.
