Kale Quiche

<p>Another delicious thing to do with all those greens. This recipe is among my top 5 for kale dishes.</p>

Serves: 2-4
Vegetarian!

Ingredients
1 bunch kale, chopped (or chard or spinach)
1/2 tsp salt
1/2 tsp pepper
1/4 cup vinegar
2 Tbsp olive oil
1 pie crust
4 eggs
1 cup Greek yogurt / milk / cream / half &half
1 cup cheese, grated

Step by Step Instructions
  1. Heat oil and cook greens with salt, pepper, and vinegar until tender. Press out extra juice.
  2. Mix eggs, liquids, cheese, and greens together. Pour into pie shell. Sprinkle cheese on top.
  3. Bake at 425 for 15-20 minutes. Reduce heat to 325-350 and bake for 30-45 minutes until firm. Enjoy!
