Holiday Garlic & Rosemary Roasted Baron of Beef

<p>Think of a Baron of Beef from a local beef producer as the showcase of a great holiday feast instead of a trucked-in turkey.</p>

Serves: up to 15 people


Ingredients
approx. 6 lbs Baron Roast of Beef (one small roast)
5 cloves garlic, minced
2 tbsp olive oil
2 tsp salt
2 tsp ground black pepper
4 tsp chopped, fresh rosemary (or 2 tsp dried)

Step by Step Instructions
  1. Place the roast in a roasting pan fat-side up. Mix garlic, oil and seasonings together. Spread over roast and let sit at room temp. for no more than 1 hour.
  2. Preheat oven to 500F. Roast for 30 min. then reduce to 325F and continue to roast for another 1-1/2 hr or until internal temperature reads 150F (medium rare – my preferred method for this cut).
  3. Allow to rest for 10-15 min. (covered with foil), before carving. Strain any pan juices and serve along side.
