Spicy Sweet Potato-Peanut Soup

Serves: 5 or 6
Vegan!

Ingredients
2 tablespoons Olive oil
1/2 of an Onion (diced)
1 Jalapeno (minced)
2 cloves Garlic (minced)
3 large Sweet potato (peeled & cubed)
1 14 ounce can Fire roasted tomatoes
(or try using fresh)
1 14 ounce can Coconut milk
2 cups Water
1 teaspoon Salt
1 teaspoon Curry
1 teaspoon Turmeric
1/2 cup Chopped peanuts
1/4 cup Peanut butter
1 or 2 cups Kale (stems removed, chopped)
Additional peanuts for topping, if desired
Cilantro for topping, if desired

Step by Step Instructions
  1. Heat the oil in a soup pot over medium heat, then saute the onion, garlic, and jalapenos until soft and fragrant.
  2. Add the sweet potatoes to the pot and brown them, then add the tomatoes, coconut milk, water, spices, and chopped peanuts and allow to simmer until the potatoes soften.
  3. Stir in the peanut butter and kale, then serve once thickened. Top with additional chopped peanuts and/or cilantro if desired.
