Kohlrabi Pancakes

Ingredients
2 or 3 small Kohlrabi (peeled, trimmed, and grated)
1/4 to 1/2 of an Onion (chopped or grated)
1 or 2 Eggs (lightly beaten)
1/4 to 1/2 cup Flour
1 teaspoon Baking powder
1 teaspoon Sea salt
1/2 of a Small chili pepper (finely chopped, ribs and seeds removed) (optional)
1/2 to 1 tablespoon Butter
1 tablespoon Olive oil
1/8 teaspoon Ground corriander
Salt & pepper to taste
Serving suggestions include:
Sour cream
Yogurt
Applesauce
or apple butter

Step by Step Instructions
  1. After preparing the ingredients, mix the kohlrabi, chopped or grated onion, chilies, egg, flour, coriander and salt and pepper to taste together in a bowl. Mix in additional flour of the batter is too thin.
  2. Heat the oil and butter in a large heavy skillet over medium-high heat. Add 1/4 cup of batter to the skillet and cook until golden brown on each side. Repeat until all batter is used.
  3. Put the finished pancakes onto a plate lined with paper towels to drain off excess grease. Serve with sour cream, yogurt, applesauce, or apple butter.
