Kiwi Berry Doughnuts

Serves: 16 dougnuts
Vegetarian!

Ingredients
1 or 2 punnets Kiwi berries
2 Eggs
3 tablespoons Caster sugar
1 teaspoon Vanilla extract
1/4 cup Milk
3/5 cup Flour (sifted)
1 satchel Dry yeast
Extra caster sugar to coat
Vegetable oil for frying

Step by Step Instructions
  1. Gently whisk the eggs, caster sugar and vanilla extract together in a bowl. Whisk in the milk and yeast. Whisk in the flour 1/3rd at a time. Let mixture rest for 30 minutes.
  2. Heat the oil in a saucepan or deep fryer. Coat a kiwi berry with 1 tablespoon of batter (using 2 spoons) then drop it into the heated oil. Cook until golden brown, and once the doughnut is ready set it onto a paper towel to drain.
  3. Repeat until all the berries have been made into doughnuts. Gently toss the doughnuts with caster sugar.
