Rosemary Mint Cordial

<p>Another refreshing summer drink. In spite of the &#8216;cordial&#8217; in the name of the drink, it does not contain alcohol (unless of course, you want to add some). This is essentially a flavored simple syrup which is then diluted to taste with sparkling or plain water, or other liquid.</p>

Ingredients
3 1/2 cups apple cider or juice
1 cup rosemary leaves
1 cup mint leaves
4 cups sugar*
1/2 cup vinegar**
1 TBS fresh lemon juice

Step by Step Instructions
  1. Dissolve the sugar in the cider or juice in a pan over medium heat. Bring to a boil, add the herbs, let simmer for a minute or two, then remove from heat and set aside. Cover and let steep two or three days, refrigerated.
  2. Strain out the herb leaves, add the vinegar and lemon juice and bring back to a boil. Pour into 1/2 c. jars, seal and process in a boiling water bath for five minutes.
  3. Note: you can add a mint leaf and rosemary sprig to the jars (as I have here) to enhance their appearance in the larder, but fish out those garnishes before mixing into drinks.
  4. To serve, start with 1/4 c. of cordial mixed with seltzer and see if that's too your liking. If not, up the cordial-seltzer ratio until you've hit the intensity you desire.
  5. * organic or raw sugar can be used. IF you wish to substitute honey, decrease amount by 1/2 to 3/4 cup. The honey will change the taste somewhat. ** cider vinegar or white wine or champagne vinegar are more healthful than the white vinegar originally called for, and can be substituted.
