Sweet Potato & Spinach Lasagna

Ingredients
FOR THE SWEET POTATO CHEESE:
1 1/2 cups Ricotta cheese
1 1/2 cups Cottage cheese
1 1/2 cups Sweet potato puree
1 tablespoon Fresh rosemary (chopped
FOR THE SAUCE:
2 tablespoons Olive oil
1 large Onion (finely diced)
3 large handfulls Spinach
24 ounces Marinara sauce
1 tablespoon Dried oregano
2 teaspoons Garlic powder
1 pinch Salt
1 pinch Pepper
ADDITIONAL:
12 Lasagna noodles
1/2 cup Mozzarella cheese

Step by Step Instructions
  1. Preheat the oven to 375 degrees and grease a baking pan with nonstick spray. Prepare 12 lasagna noodles as directed by the packaging, then set them aside.
  2. Mix the ricotta, cottage cheese, sweet potato puree, and rosemary together, then set the mixture aside.
  3. Heat the olive oil in a skillet over medium heat. Add the onion and saute for 5 minutes. Add the spinach and saute for 2 minutes. Add the marinara sauce and simmer for 2 to 3 minutes on low heat.
  4. Layer the noodles, cheese, and sauce in the baking pan, ending with a layer of noodles on top. Bake for 25 minutes, sprinkle with mozzarella cheese, bake for 5 to 10 more minutes, then serve.
