Spicy Collard Slaw

<p>A spicy vegan side dish that stars the locally grown collard greens, bell peppers, and onions that are available on Market2Go! Serves: 6 cups
Vegan!

Ingredients
1 1/2 pounds Collard greens
1 cup Bell pepper (preferably yellow, chopped)
1 cup Onion (preferably red, chopped)
1/3 cup Orange juice
1/8 to 1/4 teaspoon Hot sauce
1 Orange (peeled & chopped, optional)
Nutritional yeast
Red pepper flakes

Step by Step Instructions
  1. Remove the stems from the collard green leaves, roll the leaves into cylinders, then slice the cylinders into ribbons.
  2. Combine the collard ribbons, the chopped bell pepper, and chopped onion in a bowl. Whisk the orange juice & hot sauce together, pour the mixture over the collard mixture, then toss to coat.
  3. Add the chopped orange, nutritional yeast, and the red pepper flakes just before serving.
