Lamb Casserole

Serves: 4-6


Ingredients
2 tablespoons Unsalted butter
1/4 cup Onion (chopped)
4 ounces Mushrooms (sliced)
2 cups Cooked lamb meat (diced)
1 1/2 cups Cooked rice
2 14 1/2-ounce Cans tomatoes (undrained)
1 1/2 teaspoons Salt
1/4 teaspoon Pepper
1/2 teaspoon Curry powder
2 to 4 teaspoons Grated cheese

Step by Step Instructions
  1. Heat the oven to 350 degrees. Grease a 2-quart casserole dish.
  2. Melt the butter in a skillet and cook the onion until it is tender. Add the mushrooms and saute until lightly browned.
  3. Put the diced lamb, cooked rice, tomatoes, salt, pepper, curry powder, and sautéed onions & mushrooms, and the liquid from the skillet into a bowl. Mix gently until combined.
  4. Put the lamb mixture into the casserole dish, then top it with the grated cheese. Bake for 30 minutes, then serve.
