Marinated Flounder Fillets

Ingredients
2 pounds Flounder fillets
1 cup Tarragon vinegar
1/2 cup Yellow cornmeal
1/2 cup Flour
1/4 teaspoon Salt
1/8 teaspoon Pepper
1/4 cup Butter
Serve with asparagus
Or broccoli
Or potatoes
Or spinach

Step by Step Instructions
  1. Marinate the flounder in the tarragon vinegar for 10 minutes.
  2. Drain, then coat in a mixture of cornmeal, flour, salt, and pepper.
  3. Saute the flounder in butter until it is golden brown (about 4 minutes on each side). Enjoy with asparagus, broccoli, potatoes, or spinach.
