Chicken or Turkey Casserole with Vegetables

<p>An excellent casserole that be made using either chicken or turkey depending upon your preferences, and can be made with almost entirely market sourced ingredients! Serves: 4 servings


Ingredients
2 cups Cooked chicken
Or cooked turkey
3 tablespoons Of butter
1/2 cup Of diced celery
1/3 cup Of thinly sliced onions
1/3 cup Thinly sliced green pepper
3 tablespoons flour
1 1/2 cups Chicken or turkey stock
2 Lightly beaten egg yolks
3 tablespoons Dry white wine (if desired)
Seasoning of your choice
Minced chives
Herbs of your choice
Serve over toasted bread
Or alongside other dishes such as rice
Or broccoli
Or carrots
Or asparagus
Or a salad

Step by Step Instructions
  1. Cut 2 cups worth of cooked chicken or turkey into cubes and set it aside. In a pan, melt the butter, and stir in celery, onion, and pepper and saute until onions are golden.
  2. Sprinkle the flour over the top and cook it slowly for 5 minutes. Gradually stir in the stock. Remove the pan from the heat and stir in the egg yolks and the meat.
  3. Stir the mixture over low heat for just long enough for it to thicken slightly. If you desire you may add dry white wine and the seasoning of your choice.
  4. Place the mixture into one large casserole or into smaller individual ones. Sprinkle chives or herbs over the top and serve. Pairs well with rice, broccoli, carrots, asparagus, or salad. Can also be served over toast.
