Parmesan Roasted Acorn Squash

<p>Very simple but satisfying way to make acorn squash. I use parchment paper to line pan for easy clean up.<br /> Works well with other winter squashes.</p>

Ingredients
1 Acorn Squash
1/4 cup Parmesan cheese, grated
8 sprigs Fresh Thyme
tbsp or Rosemary
2 tbsp Olive Oil
1/4 tsp Pepper
1/2 tsp Salt

Step by Step Instructions
  1. Preheat oven to 400 degrees F
  2. Wash the squash, cut in half, scoop out seeds. Cut into slices, about 3/4 inch thick. Peel skin if desired.
  3. Toss squash slices, Parmesan cheese, herbs, olive oil, salt, and pepper together in a bowl until the squash is evenly coated; spread into a baking sheet with sides or a flat roasting pan.
  4. Roast in preheated oven until golden brown and tender, 25 to 30 minutes.
