Parmesan and Cracked Black Pepper Popcorn

<p>Savory late night snack. Only 70 calories per cup. Use a good quality imported cheese and fresh ground black pepper.</p>

Serves: Makes about six cups


Ingredients
2 Tbls Extra Virgin Olive Oil
1/4 Cup White popcorn
1 Ounce Parmesan Cheese
Salt and Pepper to taste

Step by Step Instructions
  1. Place 2 tablespoons of olive oil in a high sided pan. Set heat to medium high and add 1/4 cup popcorn to oil. Cover with lid. When the kernels begin to pop, shake the pan lightly to prevent scorching. When popping is almost complete remove pan from the stove and let rest 30 seconds before removing the lid. Pour popcorn into a large bowl.
  2. Using a microplane or the fine side of hand-held grater, grate the Parmesan cheese over the bowl of popcorn, stirring occasionally as you go. Season with black pepper and salt to taste.
