Sweet Potato JalapeƱo Poppers

Serves: 14 poppers
Vegan!

Ingredients
1 pound Sweet potatoes (peeled and cut into pieces)
1/4 cup Unsweetened plant milk
1/4 cup Nutritional yeast
2 tablespoons White wine vinegar
1/2 teaspoon Ground turmeric
Salt & Pepper to taste
7 Jalapenos (halved lengthwise and seeded, keep stems attached)

Step by Step Instructions
  1. Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  2. Prepare a saucepan & steamer basket and add the sweet potato. Add water until it's just under the basket, then bring to a boil. Cover & steam for 10 minutes. Transfer the potatoes to a bowl, allow to cool, then mash.
  3. Whisk the plant milk, yeast, vinegar, and turmeric together in a saucepan. Bring to a boil and let cook for 1 minute.
  4. Put the sweet potatoes & milk mixture into a blender and blend until smooth. Season to taste with salt & pepper. Spoon the potato mixture into the jalapeno halves. Bake for 30 minutes, then serve.
