Homemade Tomato Paste

Serves: About 3/4 of a cup
Vegetarian!

Ingredients
6 Ripe tomatoes
2 tablespoons Butter
1 teaspoon Brown sugar
1/4 teaspoon Paprika
3/4 teaspoon Salt

Step by Step Instructions
  1. Wash and mash the tomatoes, melt the butter, then add the tomatoes, brown sugar, paprika, and salt.
  2. Cook the tomatoes in a double broiler over (not in), boiling water, stirring them occasionally until the mixture has the consistency of a thick paste.
  3. Put the paste through a strainer, then store refrigerated.
