Italian Zucchini

<p>This recipe is almost impossibly easy and quick, but really deicious! Try it with any of the many good varieties of summer squash, too.</p>

Vegan!

Ingredients
2 cups thinly sliced zucchini or summer squash
1 clove garlic, minced
1/2 green pepper, chopped
1 T. olive oil
1 T. fresh basil (or 1/2 tsp. dried basil)
1/2 tsp. salt
1 dash black pepper (to taste)
1/2 to 1 cup cherry tomatoes, cut in half

Step by Step Instructions
  1. Mix together the zucchini, garlic, green pepper, olive oil, salt and pepper, and microwave, covered, for 4-5 minutes.
  2. Add tomatoes, re-cover, and microwave for 1 to 2 1/2 minutes, until tomatoes are tender.
  3. Stir, and serve.
