Oven-Roasted Sweet Potatoes

Vegetarian!

Ingredients
7 cups Peeled and cubed sweet potatoes (2 lbs)
2 tbsp Extra Virgin Olive Oil
3/4 tsp Seasoning Salt
1/2 tsp Black Pepper
4 cups Coarsely chopped onions
1 tbsp Butter

Step by Step Instructions
  1. Preheat oven to 325°.
  2. Place sweet potatoes in a shallow roasting pan coated with 1 tbsp olive oil. Drizzle with 1 tbsp olive oil. Sprinkle with salt and pepper; toss to coat. Bake at 325° for 30 minutes. Add onion; stir well. Bake an additional 30 minutes; remove from oven.
  3. Preheat broiler.
  4. Drizzle sweet potato mixture with butter; stir to coat. Broil 10 minutes or until browned.
